

From the Andes of Peru
Inka Poke is the home of several London based Peruvian-inspired kitchens. While each one is unique in their own way, they all share Inka Poke’s philosophy, namely creating delicious and practical meals with healthy, fresh, sustainably-sourced ingredients of the highest quality.
Inka Poke’s roots can be traced back to Peru which is where our creators, Silvana Martin and Beker Fabian, were born and raised. Passionate about food from an early age, both Silvana and Beker left Lima to pursue their dreams of exploring new cuisines. This journey took them far and wide to places such as Barcelona, Los Angeles, Miami and London, where they worked with some of the most influential chefs of our time. Joya’s inspiration draws on this wealth of experience, whilst paying homage to the Peruvian flavours of their childhood.

The Chefs behind the Idea
Silvana Martin studied Culinary Arts at the San Ignacio de Loyola University in Lima with a specialisation in Food and Beverage Management at the San Ignacio University in Miami. After her studies, she moved to Barcelona where she had the opportunity to work at 3 Michelin stars award-winning restaurant ABAC alongside master chef Jordi Cruz. Over the years, she also spent time in Los Angeles cooperating with master chef Ricardo Zarate on many of his successful restaurants.

Since an early age, Beker Fabian has been passionate about food and spent many hours with his mother and grand-mother in the kitchen learning about traditional Peruvian cuisine in his hometown of Cajamarca, Peru. After having gained experience in Lima, he moved to Spain where he opened restaurant “Astrid and Gaston” with master chef Virgilio Martinez, one of the most acclaimed and well-known modern Peruvian chefs, and worked alongside master chef Gaston Acurio at restaurant Tanta.
